Peanut Butter Chicken-Tasha Horton

Serves 4 – 6

2 ½ lbs. chicken thighs, de-boned

1T. creamy peanut butter

1 ½ T. Hoisin sauce

¾ C. sugar

1 tsp. salt

½ tsp. pepper

1-2 cloves garlic, minced

Fresh ginger to taste (1 inch smashed)

Mix all ingredients for the sauce and marinate chicken in sauce overnight (this is a must!) Grill on a hibachi or broil in the oven until chicken is cooked through. Serve with white rice. Great for a BBQ!  Serves 4-6.

  1. When I made this it turned out to be more of a paste than a sauce. Is there an ingredient missing? I am really looking forward to making this chicken — yummy!
